Growing up in coastal New England to an Italian mother and English dad Cliffe grew up around international flavors. He is most at home with classic flavors and fresh ingredients.

While on the hunt for the best quality meats for his guests at his flagship restaurant, Rosewood Kitchen Enoteca, he found there was no one offering the quality and craftsmanship he craved. So he opened the Butchery by Rosewood and set a new trend in the capital city of Ulaanbaatar starting a meat revolution focused on sustainability, traceability, and quality.

For more than 10 years, Cliffe has grown the Rosewood brand into the most respected hospitality group in the city thanks to his commitment to quality, service, and supporting sustainable and responsible farmers whenever possible.

Cliffe is an accomplished restauranteur, chef, skilled butcher, and baker. Do not be surprised to find him at any one of his businesses teaching, testing, and creating new recipes for all of us to enjoy!
